Festive White Chocolate Jewelled Flapjack

  • 250g butter
  • 250g soft brown sugar
  • 4 tablespoons golden syrup or honey
  • 400g oats
  • 60g dried cranberries
  • 200g dried apricots, chopped
  • 100g white chocolate, melted

    Preheat the oven to 210°C/ 190°C Fan/ Gas Mark 7.

    Line the dish with baking parchment.
  • 3
    Place the butter, sugar and golden syrup in a large saucepan and bring to the boil over a medium heat.

    Add the oats, cranberries and apricots and stir well for 1 minute.
  • 5
    Spread the mixture evenly into the dish and bake in the oven for 20 minutes or until the mixture is just starting to bubble.

    Remove from the oven and score into 12-16 equal pieces.

    Leave to cool completely and then drizzle the melted white chocolate over the top.

    When the chocolate has cooled remove the flapjack from the dish and cut into the scored portions.
