For the steak
- 400g sirloin steak
- 2 cloves of crushed garlic
- Sprigs of rosemary
- 1 tbsp oil
- Sea salt and cracked black pepper to season
- Pinch of Aleppo pepper flakes
For the salsa
- 2 red peppers, roughly chopped
- 2-4 jalapenos, halved
- 1-2 tbsp chopped coriander
- ½ red onion, finely diced
- Juice of 1 lime
- Salt and pepper, season to taste
To serve
- Whipped Feta
- Small Tortillas
- White wine

Method

1Start by seasoning your steak and bringing up to room temperature. Then cook your steak in a ridged cast iron skillet for 3-4 mins on each side. Allow to rest while your make your salsa.

2For the salsa char grill the peppers and jalapenos on a hot ridged skillet until the start to caramelise and burn. Then add lime juice, salt and pepper and any juices from the steak pan.

3Finely chop the chargrilled peppers and combine in a bowl with coriander, red onion and more lime juice.

4Heat your tortilla for 30secs on each side in a hot pan and then spoon on your salsa.

5Carve your rested steak thinly and plate up with a small dollop of whipped feta. Garish with borage flowers if available and serve with a chilled glass of white wine.
