- 500g ruby gem or new potatoes
- 1 onion
- Bunch of radishes
- 1 Leek
- 2 tbsp of olive oil
- A big pinch: salt, pepper, Za’atar, sumac, ground coriander and ground cumin
- 3 spring onions
- 200g peas
- 1 tsp Dijon mustard
- 2 heaped tsp Wholegrain mustard
- 1 1/2 tbsp honey
- 3 Garlic cloves
- 1/2 tsp paprika
- 1/4 tsp chilli flakes
- 500g salmon
- Lemon, Parsley and thyme to serve

Method

1Half potatoes and radishes, slice red onion and leeks.

2Add the above to your tray alongside the olive oil and spices except for the paprika and chilli.

3Roast in a preheated oven at 180C for 30mins, stir half way through.

4Meanwhile, mix together, mustards, honey, garlic, paprika and chilli flakes.

5Remove tray from oven then stir through sliced spring onions and peas.

6Make a well in the centre and lay down your salmon skin side down.

7Brush honey mustard mixture over the flash side and top with a slice of lemon.

8Bake for a further 12-15 minutes depending on how you like your salmon and serve with fresh parsley, cracked black pepper and thyme.
