- 25g butter, at room temperature
- 30g caster sugar
- 40g plain flour
- Finely grated zest and juice of 1 lemon
- 2 medium eggs - separated
- 80ml milk
- 2 tablespoons Amaretto liqueur
- Icing sugar, for sprinkling

1Preheat the oven to 180°C/fan oven 160°C/Gas Mark 4.

2Position an oven shelf towards the center of the oven. Use a small knob of the butter to grease two Le Creuset Stoneware Heart Ramekins.

3Beat together the remaining butter and sugar, adding 1 tablespoon of hot water. Sift in the flour, then stir it in with the lemon zest and juice. Add the beaten egg yolks, milk and Amaretto liqueur to the mixture (don't worry if the mixture curdles a little).

4Whisk the egg whites in a grease-free bowl until they hold their shape. Fold them into the lemon mixture, then transfer to the prepared dishes.

5Stand the dishes in a roasting pan with water to come about a third of the way up their sides. Bake for 40 minutes until risen and golden.

6Serve immediately, sprinkled with a little icing sugar.

8If you prefer a non-alcoholic version, replace the Amaretto with 2 more tablespoons of milk.
